ERLE DARDICK, founder of Off-Premise Insights, is a restaurant catering veteran, author, entrepreneur and off-premise thought leader.

Erle created The 5 Pillars of Successful Takeout, Delivery & Catering in 1997, based on his success in developing a struggling Vancouver deli into a flourishing restaurant and off-premise operation. The 5 Pillars has since evolved to become the leading strategic framework for the restaurant and foodservice industry.

Today, Erle is CEO of Monkey Group, which includes Off-Premise Insights, producers of the 2018 Restaurant Takeout, Delivery and Catering Symposium as well as  The Catering Institute, and Monkey Media Software, producers of MONKEY, the #1 cloud-based platform for takeout, delivery and catering.  Erle is also the author of "Get Catering and Grow Sales" and Co-host of The Takeout, Delivery & Catering Show on Foodable.

DARREN TRISTANO is a trend expert in the foodservice industry. He provides industry insights and perspectives on consumer and menu trends, restaurant chain and concept growth, and market performance and intelligence.

Darren co-founded Technomic Information Services Inc. with Ron Paul in 1993, under the title of Chief Insights Officer. Darren has also served Technomic as  President, Chief Financial Officer and Executive Vice President, leading the development and growth of Technomic’s Information Services division, while also serving in a strategic capacity directing multiple aspects of Technomic’s ongoing operations.
